Last night it was just the 5 of us, all together for dinner in our backyard enjoying the summer landscape, pets brushing up against our legs in a curling fashion under the patio table.

Coming together

Coming together to enjoy a meal with our kids, and engage in long conversations, is always special. I love it when they ask questions about Paul’s and my early lives. I savor these days quite fondly as we’re able to dine together.

The day is coming when we will be scattered. I hate that word, but I do anticipate this dreaded time. On the other hand, we’ve prayed for and encouraged our kids for years to follow their passions, and soar with their dreams!

Salsa is a Mexican vegetable appetizer made up of finely chopped elements in various combinations, as the ingredients used to create salsa can vary. It often contains ingredients that may not initially seem like the best option for a salty dish, such as fruits or berries. Thanks for the recipe.

Could you freeze this? I know that the watermelon would turn to mush if completely defrosted but I am thinking about serving partially frozen.

    • Sandy

No I would not freeze the watermelon! :(

How long would this store for?

    • Sandy

I’d serve it within 4 hours of making it, Stephanie, to keep the crispness of the watermelon!

What a beautiful salsa – I would want the whole bowl to myself! We used to take weekend car rides, too. Just head out in any direction and see where it took us. We usually ended up at some park or the home of friends or family, or somewhere casual to eat. Super casual, always fun.

FAQs

What do you sprinkle on watermelon? ›

Mint, basil, and thyme are all lovely fresh herbs to chop up and sprinkle over watermelon. The earthy and savoury nature is a fabulous contrast to the sweetness of the melon. Olive oil, white balsamic vinegar, and lime juice are also sensational with watermelon.

What should you not mix watermelon with? ›

It is recommended to avoid mixing watermelons, muskmelons, cantaloupe, and honeydrops with other fruits. “Melons should only be eaten with melons as they are digested more rapidly than other fruits. Melons have high water content, so they might not digest properly when combined with fruits,” said Dr Reddy.

What enhances the taste of watermelon? ›

A small sprinkle of salt doesn't just offer a salty-sweet kick, it also brings out the sweetness in the watermelon, making this the perfect hack for when you dig into a lackluster slice. Trust me, I've had people FREAK over this simple trick; it's a game-changer.
