This recipe has been a family favorite for years and years. When I was young my grandma made the BEST mac and cheese in the world. We loved it… she wouldn’t give up the recipe, even to my mom {her daughter!} After she passed away, my papa {grandpa} took over making the family favorite and did he eventually gave us the official recipe. I was actually shocked at how not-good-for-you the recipe was… yikes! My mom and I worked on a better for you version and that is what I’m sharing today!

Baked Mac and Cheese
Ingredients:
3 cups macaroni or similar noodle {uncooked}
1 Med. Onion
10-12 oz. reduced fat American Cheese {3 cups shredded}
2 cups Cheddar Cheese
Salt, Pepper, low fat Milk {2-3 cups}
{optional} Bread crumbs
Cook noodles until al dente { Not too soft!} , do not rinse.
Finely chop the onion and saute in 2TBS Country Crock.
Layer in the dish with American cheese, onion, Country Crock and spices in each layer.
You should have 2-3 layers with the cheddar cheese covering the top.
Cover the top with Bread Crumbs {optional}
Add milk until the dish is 1/2 full
back at 375 for 1- 1 1/4 hours… Check.. milk should soak into noodles and top should be crispy.
I bake 1/2 time covered and 1/2 uncovered.
We choose to substitute Country Crock for butter for these reasons:
- It has 0g trans fat per serving
- Contains no partially hydrogenated oils
- Has no cholesterol
- Is 70% less fat than butter per serving
- Has 30% fewer calories than butter per serving
I love that I’m now passing this family recipe onto my kids! They love it {although sometimes they pick on the onions!}… I can precook the pasta, get it all layered in the dish and keep it in the fridge until we are ready to come home and pop it in the oven. After a busy day out and at school, this makes a great home-cooked meal that we all enjoy. This Baked Mac and Cheese recipe will remind me of my papa every time I make it and I hope stays a family favorite for generations to come.
