Last month for my birthday my sister gave mea copy of the cookbook “Run Fast, Eat Slow” by Shalane Flanagan and Elyse Kopecky. I was excited to try out some new recipes over the past few weeks, and I have already found a few that I love and plan to keep in my regular meal-planning rotation. It’s really nice to have an actual cookbook rather than looking up recipes on my phone! (While that is really convenient, those recipes may not be available forever. Plus, how annoying is it when the page closes while you are in the middle of cooking?!)
Here are 5 of my favorites (so far!)
On The Run Frittata Muffins
These reminded me of my sweet potato frittatas, but without the bacon. This recipe also uses cheese and yogurt which gave them some extra flavor so I didn’t even miss the bacon! These were perfect to make over the weekend and eat before work in the mornings.
Superhero Muffins
Another great make-ahead breakfast. I usually had one of these with a frittata (one or the other is just not enough!) This recipe requires grated carrots and zucchini but other than that they are really easy to make! And how great is it that you are eating veggies in a muffin?
Marathon Lasagna
I only made this once, but it lasted me for days! This was such a great twist on standard lasagna. It took just as long as any other lasagna to make, but there are lots of veggies in there. It definitely got 2 thumbs up from Rob, and I brought leftovers for lunch for days.
Bacon-Wrapped Stuffed Chicken
We have already made this meal at least 3 or 4 times in the past month (Rob is a little obsessed). I love that I can cook everything in a cast iron skillet so it ends up being a pretty easy meal to clean up at the end. I will admit that it takes some practice to get the hang of stuffing and wrapping the chicken. However, even if it doesn’t look pretty or stay together well it still tastes really good!
Sweet Potato Fries
I have been making sweet potato fries for years but never really followed a recipe. A few tweaks made this side dish crispier and more flavorful. I wish I could share the secrets but you will just have to get the book!
Now I just need to try some more recipes from the cookbook. It’s tempting to just stick with these now that I know how good they are!

I have heard so many great things about this cook book that I keep meaning to check it out! I like the muffins idea, I really never bake anymore but maybe I should!

I really like baking something like muffins each weekend…I feel like it helps me to round out my breakfast!

All these recipes sound tasty. I like dishes that I can eat for a few days like that lasagna. I don’t normally like lasagna because I don’t like ground beef. Is this a veggie one?

This one uses ground turkey. Im sure you could leave it out if you didnt want it because there are lots of other flavorful ingredients!

2, 3, and 4 sound amazing. I’m not a sweet potatoe person lol. Wife makes le cordon blue chicken that is amazing. Or parm encrusted chicken. I think she finds them online. As for me, does blue box Mac and cheese count?? Lol

We used to make a parmesan crusted chicken that was amazing! I havent made it in awhile, and should really add that back into the rotation.

Sometimes thats a great way to do it! It worked for me for years…now this method just helps them to get a little crispier.
I love the roast chicken recipe from Run Fast, Eat Slow. The beet hummus was a hit also. I need to try the fries and muffins!

The High-Altitude Bison Meatballs are fantastic – they’re a regular in my dinner rotation now (although I admit that I use jarred marinara sauce.)The Ginger-Molasses Granola is really good, too. I’m looking forward to working/cooking my way through the book!

I use both cookbooks and online recipes. I have a binder I store all the printed recipes in to keep things organized. It does go right next to the cookbooks on my bookshelf.

I love the cookbook too! I have made the muffins and frittatas but have yet to make the other ones you mention. Everything has been so delicious! I am very addicted to the granola recipe.

The Sweet Potato Breakfast Cookies are amazing. I’ve heard so much about the Superhero Muffins – those are on my to do list this weekend. I will say, the recipes tend to be labor intensive and required quite a bit of planning. Last weekend I picked two recipes that had the sweet potato puree (cookies and salmon cakes) and made that ahead of time since I can’t start that effort at 8pm on a Monday when I’m already starving! Honestly I was not a fan of the salmon cakes but I think it’s the mustard – I like the idea of them enough that I’m going to mix up the seasoning and try again!

I agree that they can require some work but I find that after making each recipe once it gets easier because you know what to expect. I have made most of these on Sundays when i have more time. Sometimes I make the bacon wrapped chicken on a weeknight and it definitely takes longer than I would like!

I don’t have any other cookbooks but this is one I am really glad to own!
I really need to cook more – I tend to keep going back to the same few things (old standards). That lasagna looks really good though and I like the idea of getting lots of veggies in it. I’ll have to give that one a try! Thanks for testing them out for us 🙂

I used to make stuffed chicken breasts a lot–I haven’t done that for a while. I need to dig out some of those recipes. Sounds like a great cookbook!
